As many others do when a new year begins, I've set myself a health related "resolution" or "intention" and this year it's all about promoting wellness and energy through mindful eating
(+ movement!)
I'm not someone who is particularly enthusiastic about spending time in the kitchen, but I'm slowly adding simple and healthy recipes to my repertoire and have actually been really enjoying the process!
I thought that I would share some of these "cooking adventures" on the blog as I go along, in the hopes that it will inspire you too! ... and if I can make them anyone can - trust me!
First up is this yummy (and simple) tuna, parsley and olive salad. Even if you're not a fan of tuna (Tom doesn't usually eat it but really enjoyed this meal!) I'd recommend giving this a go as the other ingredients mean it doesn't taste "tuna-y" at all!
You can really adapt it to you own taste adding more or less of each ingredient depending on what you like. I just play it by ear each time and it's always yummy!
Ingredients:
1) Parsley (a nice big bunch!)
2) Olives (approx 1/2 cup)
3) 1/2 a Red Onion - Spring onions are great too!
4) Garlic (1-2 cloves)
5) Canned tuna (200g)
6) Black pepper
7) Good quality olive oil
Method:
1) Chop up the parsley, olives, onion and garlic (I like everything chopped pretty finely but whatever works for you!).
2) Drain the oil from the tuna and stir it in.
3) Drizzle over the olive oil and give it a good mix. You'll want to use really good quality olive oil to give it that delicious taste!
4) Season with pepper
To Serve:
This time I had it with some flat bread and Cos lettuce. A spoonful scooped into each cos lettuce leaf is really delicious as the lettuce gives a nice fresh crunch! It's also great on normal toast, in a wrap, with pita bread or just over a bowl of leafy greens if you want to be really healthy and skip the carbs!
