How To Make Fresh Pasta And Bolognese Sauce - Cooking With Nonna Episode 1

Hello again friends!

This week I have another video to share and it’s the first in a series I plan to do called

“Cooking With Nonna Anna”

My Nonna has some awesome recipes to share and I thought it would be fun to spend some time in the kitchen with her, learning and also filming so I can share them with all of you!

Today’s we’re showing you how to make fresh homemade pasta and bolognese sauce. A basic recipe, but a staple, and I think it’s so great to see how Nonna cooks and all the little tips and tricks she has to share!

I’ve included a brief recipe below for a quick reference, but for more details, I’d definitely recommend watching the video and actually seeing how it’s done! (Plus my Nonna is SO CUTE!!)

This will make enough pasta for approximately 8-10 people (depending how hungry you are!!)

Also keep in mind that it’s not an exact science! You might need to add more flour depending on the size of your eggs and you can add spices to the sauce depending on your taste preferences!

As Nonna says (in her Italian accent) - “It all depends what you like!”

For The Pasta:

Ingredients:

  • 4 cups flour (maybe 5 if you have large eggs)

  • Pinch of salt

  • 6 eggs

  • 1/2 cup water

Method:

1) In a large bowl, mix the flour, salt, eggs and water together with a fork.

2) Once it is mostly mixed, go in with your hands and mix into a firm dough. You may need to add extra flour (the eggs we used were quite big so we added almost an extra cup of flour).

3) Knead the dough with your palms and form it into a big ball of dough.

4) Place the dough in a saucepan with the lid on and rest for 15mins to 1 hour (longer is ok too).

5) Time to roll out the dough! You can either use a pasta machine or if you don’t have one, a rolling pin will also work (although will be a bit more labour intensive!).

6) Once the dough has been rolled into thin pieces, set it aside to dry a little bit (for approx 30 minutes) and then lightly dust with a little more flour.

7) Now it’s time to cut the pasta! In the video, Nonna shows us how to do this with the pasta machine, but also just with a knife if you don’t have a machine!

8) You can either cook the pasta straight away, or it can be popped on a tray and frozen for later. If you do freeze it for another day, it’s best to cook from frozen, otherwise it will clump together. Also important to remember - fresh pasta cooks much more quickly than the normal store-bought kind!

For The Bolognese Sauce

Ingredients:

  • 1/2 an onion

  • Olive oil

  • Approx 700g mince beef or pork

  • 2 bottles tomato sauce (we used home made sauce but store bought is fine too!)

  • 1 sachet tomato paste to thicken the sauce

  • Salt & Pepper

  • Nutmeg

  • Optional chicken leg and carrot to add extra flavour!

Method:


1) Add olive oil and onion to the pan and cook until the onion is softened

2) Brown the mince

3) Once browned, add the tomato sauce and tomato paste

4) Add the salt, pepper and nutmeg (approximately a pinch of each)

5) You can also add some chicken and carrot if you like

6) Allow to cook for 30 minutes to half an hour

Serve over the pasta and top with parmesan cheese!

My family has a bit of a tradition of getting together for dinner on a Thursday night and afterwards sitting down to watch a bunch of cooking shows, so Nonna and I had such a fun time together making our own little show!

I hope you enjoyed the video and I’d love to know if you try making it yourself!

There really is nothing quite like fresh, homemade pasta!
